Estancia Vik José Ignacio: South American Barbeque – Uruguay

Estancia Vik José Ignacio, inspired by the magnificent landscape of José Ignacio, its vast rolling hills, rugged countryside and proximity to the Atlantic Ocean, has been designed to preserve the untouched beauty of its natural surroundings. A traditional Uruguayan barbeque has been built at the north side of the Estancia, mirroring the ancient tin galpons found wherever the gauchos roamed; this too having the traditional tin walls with a large central fireplace or “fogon.” Marcelo Legrand, a notable Uruguayan artist, who also designed one of the Estancia’s suites, has painted the walls and ceiling in his brilliantly chaotic style, bringing a contemporary flair to this traditional space.
Food enthusiasts now have the opportunity to live a day in the life of a gaucho at Estancia Vik. Guests can now experience and indulge in a traditional South American barbeque through this unique package.

Cooking at Camont: Master the art of Gascon cooking

Come to Camont for a long weekend or a week’s course and explore the classic French cooking techniques behind recipes that define Gascon cooking. Each day’s seasonal menu is born at the local markets and farms where we meet producers and learn to choose vegetables at their freshest, cheese at its ripest, and the perfect cut of meat for the dishes we create.

The dishes you’ll cook form the backbone of French regional cooking in the Southwest and as we explore the classic French techniques – sauteing, braising, roasting, baking and grilling – through the famous dishes of the region.

More cuisine familial than haute cuisine, Gascony celebrates local food from its farms and artisan producers in one of France’s most diverse agriculture regions. This abundant harvest gives birth to regional specialties like garbure, poule-au-pot, lapin aux pruneaux, confit de canard, foie gras en torchon, and gigot d’agneau aux haricots.

Course details:

We start in the morning for the first of our intensive day-long classes. Working only with local farm fresh ingredients and classic French techniques, we create exemplary seasonal menus that reflect terroir in the cooking of Southwest France. We cook for 6 hours per day – breaking for a long French lunch  from the best seasonal Gascon produce! And of course, cooking isn’t only about recipes and ingredients. On market days, we’ll take you to our favorite farmers’ market to meet some of our favorite artisan food producers.

Example day:

9:30- 12:30  Meet at Camont for a morning of classic French techniques creating starters and main courses.

12:30-2:00   Our French lunch on the terrace breaks the day as we celebrate the arts of the table.

2:00-5:00:   The sweet afternoon is devoted to creating Kate’s fool-proof buttery pastry and other desserts famous in Gascony which we indulge in the traditional afternoon gouter with coffee, tea or an aperitif!

ChocoMuseo Guatemala: Chocolate-Making Class

THEORY

  • A presentation of cacao, how it grows and is harvested
  • Presentation of the chocolate making process “from beans to bar”

PRACTICE

  • Roasting of the cacao beans
  • Cacao Husk removal
  • Grinding of the cacao nibs with a mortar and pestle similar to the metate and mano used by the Mayas
  • Refining and conching of the cacao paste in a melangeur

COOKING

  • Preparation of 3 chocolate drinks : Cacao tea, Mayan hot chocolate, European hot chocolate
  • Preparation of your own chocolates, with a selection of ingredients: almonds, nuts, coffee beans…

ENJOYING

  • Tasting of cacao tea
  • Tasting of a two hot chocolates
  • You can leave with your own handmade chocolate bar and bring it back to your friends and family, 30 min after the end of the workshop

Norfolk Walkabouts: 5 Points Farm Market Tour

Stroll through the 5 Points Farm Market and experience a transformation of the palate.  Visit multiple vendors sampling regional cuisine and produce while having a behind the scenes experience as staff discusses the culinary creations and history of the establishment.  Sample Local dairy, Regional produce, Smoked barbecue from the Cafe, Cookies from a local bakery, and more.

In between sampling, gather an insight being “green”, learn about Community Supported Agriculture, and find out about the advantages of local honey.  Transport your senses with the various spices and fresh, local provisions offered by Norfolk’s “hidden gems” and culinary visionaries.  So, grab your forks and dig into Norfolk!

The tour is approximately 1.5 hours.  Water will be provided with the sampling from the cafe.  Beer and wine will be available to order.

INSTRUCTION

Thai food is an exceptional combination of exotic sweet, tangy and peppery spices, fresh ingredients, and stunning presentation, and most who try it are hooked for life. Traditional Thai cooking is taught at home. Every mother is a “teacher” and family recipes are passed down from one generation to the next. Meals are always shared family affairs and are an important part of Thai cultural heritage. Therefore, our Bangkok and Chiang Mai cooking schools are set in home-style learning environments, with open-air, Thai-style kitchens, surrounded by aromatic herb gardens, orchards and rice paddies. Our instructors will pass down their family recipes, as they teach us about ingredient selection, combining spices into curry pastes, and preparation of full meals of Thai cuisine. THAI COOKING CLASS 1:

A simply prepared dish with a traditionally spicy and sour flavor.

* Tom Yam Kung – Hot and sour prawn soup
A delicious sour soup-flavored with fresh lemongrass and aromatic kaffir lime leaves.

* Phad Thai – Thai fried noodles
A stir-fry comprising rice noodles, tofu, bean sprouts, egg and prawns. This taste sensation uses the combination of sweet, sour and salty flavors to enhance the superbly contrasting textures.

* Kaeng Ka-Ri Kai – Yellow chicken curry

* Som Tam – Papaya salad
This justly renowned Thai salad specialty is made by bruising julienned green papaya with garlic, small chilies, tomatoes and long beans in a clay mortar with a wooden pestle.

* Nam Prik Khao Soi – Khao soi curry paste
A unique northern curry pastethat includes the deeply flavored black cardamom among its ingredients. This paste is essential in preparing Chiang Mai’s famous “Khao Soi” noodle soup.

* Khao Soi Gai – Egg noodles with chicken curry soup
A Chiang Mai specialty, this egg noodle soup combines coconut curry soup with a tasty topping of crispy fried noodles. Served accompanied by pickled green mustard, shallots, limes and chili oil.

* Plaa Priew Waan – Sweet and sour vegetables with fish
Deep-fried fish, pineapple and mixed vegetables cooked in sweet and sour sauce.

* Gaeng Leiang Goong Sod – Mixed vegetable soup with prawns
Thickened with curry paste, this spicy soup contains a host of herbs and vegetables and is rounded off with a bright citrus flavor from the lemon basil leaves.

* Sankhaya Fakthong – Home made sweet custard cake with pumpkin
Delicious Thai dessert combining the luscious flavors of coconut milk, egg custard and pumpkin.

THAI COOKING CLASS 3:

* Tom Kha Gai – Chicken soup in coconut milk
A coconut-based soup with a similar taste palate to tom yum soup, this version is sweeter due to the addition of coconut milk.

* Nam Prik Gaeng Ped – Thai red curry paste
The original and classic Thai paste that is used in a variety of curry soup dishes.

* Gaeng Ped Ped Yang – Red curry with roasted duck
An unforgettably delicious curry soup that combines fresh fruit and roasted duck.

* Khao Phad Sub Pa Rot Sai Goong – Fried rice with pineapple and prawns
A recipe specially made for healthy eaters, with the pineapple adding a touch of tart sweetness to the dish. It has a rich creamy texture that superbly complements the prawns.

* Gai Satay – Chicken satay with peanut sauce
Simply marinated chicken that is skewered, charcoal-grilled and served with peanut sauce.

* Glauy Tord – Thai-style banana fritters
Unlike the well known Western version, these Thai banana fritters use coconut batter and smaller, less ripe bananas that hold their shape and texture better when deep-frying.

Learn how to make chocolate, from the cacao tree to the chocolate. In this Workshop we will follow all the process to make chocolate from fermented organic cacao beans. We will learn how to roast, winnow, grind, mix, conch, refine and mold. At each step of the process we will be preparing different cacao products: Cacao Husk Tea, Hot Chocolate, Mayan drinks, Nicaraguan drinks and Chocolate bars. At the end of the workshop you will leave with a sample of Nicaragua chocolate.
